Style Pancakes with Blueberries Serves
four (or two if you're really hungry!) Ingredients: 6
oz plain flour 2
teaspoons baking powder Half
a teaspoon of salt 2
teaspoons sugar 2
free-range eggs 8
fl.oz milk 3
oz butter Method: Sift the flour, baking powder and salt into a bowl and stir
in the sugar. Melt the butter in a small (8 inch) frying pan over a low
heat. Meanwhile, whisk up the eggs in a jug with the milk, then add the
melted butter and mix well. Add this to the flour mixture a little at a
time and mix well to form a smooth, thick batter. Put 4 tablespoons of the mixture into the frying pan and cook for a
couple of minutes each side, until lightly browned. Add a teaspoon of
butter to the pan between pancakes to prevent sticking. Serve hot with a
handful of blueberries and drizzled with maple syrup — or local honey!
For apple pancakes - core, peel and chop an apple. Melt a knob of buuter in the frying pan and cook the apple pieces for about three minutes until soft, before adding the pancake batter. Allow half an appe per pancake. |
