Savoury Cheese and Apple Pastries

Makes 10 

1 500g pack puff pastry (for Super Speedy Pastries use ready-rolled!)

3 small eating apples, cored, peeled and cut into thin slices

Blue cheese, such as Stilton or Shropshire Blue

A few walnuts or pecan nuts, roughly chopped

1 egg, beaten

Freshly ground black pepper

 

Cut the block of pastry into 9 small squares, and roll each one into an 8cm square, trimming the edges to neaten the shape. (You can use the trimmings to make an extra pastry). Place them on a well-greased baking sheet.  With a sharp knife, mark a 1cm margin inside each square, without cutting through the pastry. Place thinly-sliced blue cheese on the pastry square, keeping within the margin. Arrange 3 or 4 apple slices on top of the cheese and add a scattering of chopped nuts. Brush beaten egg over the margins and sprinkle with black pepper. 

Bake in the oven at 200°C for about 10 minutes, until the edges of the pastry are well-risen and golden brown. Eat hot or cold.
